Ground Turkey Stuffed Peppers


This is a super easy easy dish to make if you are lacking time, but surely doesn't taste like it was something thrown together. Seems like something I always say. This recipe was created because I was in absolute zero mood to go to the market and decided to just search the fridge and freezer to see what I had available to make a decent meal out of.  Well, I always have fresh herbs on hand and I also found some frozen ground turkey that I thawed.  And alas, a pair of red organic peppers just waiting to be decorated with foodie goodness. This dish came together so fast and tastes so good.  So let's get to work!

What you need:
~2 Organic large red peppers
~1 Package of ground turkey
~Handful of fresh Cilantro
~2 Tbsp ground garlic
~1 Tbsp Onion powder
~Up to 2 Tbsp salt
~Pepper to taste
~1Tbsp Red pepper flakes
~1 Tbsp BBQ Spice mix (any brand will do)
~Extra Virgin Olive Oil as needed
~2 Small handfuls of shredded Pecorino/Ramano cheese

Let's get to work:
1) Brown the ground turkey with the spices and a swish of Olive oil.  Taste the meat when all browned and adjust what you need more of.  Should be a bit spicy, but taste very tender and perfectly balanced.  Once browned, throw in the first handful of the cheese.
2)Cut the top off of the red peppers and empty seeds.  Then cut enough of the bottom off so that it will sit evenly in the pan if it doesn't already. Don't cut it completely off.  It's important to have a "drip hole" in the bottom of the pepper so the juices can flow through during cooking and not make everything watery and soggy and the taste ends up being bland.
3)Stuff the pepper as much as you can with the turkey meat and place in an oiled pan in the oven at 375 degrees for about 25 minutes.  Remember, meat is already cooked, so what you need to do now is make sure the pepper is cooked through.  You can tell it's done by slight wrinkles on the outside skin of the peppers.  Turn oven off leaving peppers in the oven to settle, but sprinkle last of the cheese on top and let melt.  Once melted, remove from oven and serve along side of a little extra turkey meat and fresh chopped Cilantro, then pour lightly, some olive oil all over the dish and enjoy. Pairs so amazingly with a Portugal red wine.
