The BEST Keto-friendly Buffalo Cauliflower Bites!






I don't know who doesn't like buffalo wings with the lick your fingers buffalo sauce that keeps burning your mouth, yet you come back for more!  If you stick a bowl of wings in front of me, they are gone.

These days it seems that everyone is looking for low-carb options and these Buffalo Cauliflower Bites are absolutely low-carb and Keto friendly!  The batter for these is made with almond flour, so you still get that coated taste like Buffalo Wings.  These are baked and not fried, so even better.  So enough talk and let's get cooking!

What You Need For the Batter:
  • 1 Large head of Cauliflower broken down to large flowerettes. 
  • 1/2 Cup of Almond Flour
  • 1 Tbsp Extra Virgin Olive Oil, or Avocado Oil 
  • Up to 1/2 Cup Water
  • 1 1/2 Tsp Granulated Garlic
  • 1/2 Tsp Paprika (Smoked paprika is great too!)
  • 1 Tsp Granulated Onion Powder
  • Salt and Pepper to taste
What You Need For the Buffalo Sauce:
  • 1 Cup Franks RedHot Sauce
  • 1/2 Cup Butter
  • 1 Tbsp Granulated Garlic
  • 1 Tbsp Honey
  • 1 Tsp Granulated Onion Powder
  • 30 dashes Tabasco Sauce
  • Few dashes Salt and Pepper

Let's get to work:
  • Preheat oven to 375 degrees
  • Break apart the cauliflower into large bite size pieces and set aside in a bowl.
  • Whisk all the batter ingredients together except the water
  • Gradually whisk in enough of the water to make a thick yet pourable batter.  You really need to watch this here because it's easy to make it too runny.  No worries if you do, the fix is to add a bit more almond flour to thicken it up again and adjust your spices.
  • Pour the batter over the cauliflower and toss gently to coat all over being sure you have good coverage over the cauliflower pieces.
  • Spray a large baking sheet with cooking spray and then place the cauliflower on the baking sheet in a single layer and not touching each other. 
  • Bake for 30 minutes turning carefully at the 15 minute mark.
  • While the cauliflower is baking, put all the buffalo sauce ingredients in a small sauce pan and heat whisking frequently until butter is melted. Remove from heat.
  • Once the cauliflower is done, remove from oven generously brush on the buffalo sauce to coat evenly.  Use the remaining for dipping.
  • Set your oven to 475 degrees and cook for 5 more minutes.
  • Serve on a serving plate with celery stalks and carrots and your favorite dipping sauce like blue cheese or ranch or whatever you normally love to dip your buffalo wings in.
Tips:
These will not be crispy per say as they are baked.  Don't overcook as that will cause them to be too soggy, so watch them in the oven closely. You almost want them al dente like pasta.  You can use flour instead of almond flour. I just happen to like the extra health benefits of using almond flour.
