Peanut Butter Cup Cookies with Macadamia Nuts





These cookies are absolutely incredible.  Chocolaty, and chewy, not to mention all that peanut butter goodness all wrapped up into one intense cookie.  Upon eating you would think there is a party in your mouth! =)  Enjoy!!  I happened to have a picture of them when I made them in the past.  Can't wait for my good camera!


What you need:
1/2 Cup softened butter
1/2 Cup Crisco
3/4 Cup creamy peanut butter (Jiff works best)
3/4 Cup sugar
3/4 Cup packed brown sugar
2 Eggs
2 Tsp pure vanilla extract
2 1/3 Cups flour
1/3 Cup unsweetened cocoa powder
1 Tsp Baking soda
1/2 Tsp Salt
1 Cup Chocolate chips
1 Cup Peanut butter chips
15 Mini Peanut butter cups chopped into 4 pieces each
1/2 Cup chopped Macadamia nuts


Let's get to work:

  1. Preheat oven to 350 degrees
  2. Cut each peanut butter cup into 4ths and place in a ziplock bag and put in the freezer until frozen.  This allows the peanut butter cups to keep their shape when stirring them in the mix later.
  3. Cream butter, Crisco and sugars, and peanut butter until smooth.
  4. Beat in eggs one at a time and vanilla
  5. In another bowl, whisk the flour and baking soda, salt and cocoa powder until blended.
  6. Add to the peanut butter mixture a cup at a time until blended.
  7. Stir in by hand peanut butter chips, chocolate chips, Macadamia nuts and frozen peanut butter cup pieces.
  8. Drop by generous tablespoon fulls on ungreased cookie sheet or use a Silpat sheet on your cookie sheet.  They are wondeful.  Here is the link if you don't  know what they are: http://silpat.com/ 
  9. Bake for about 8 to 10 minutes and remove from oven and leave on pan for about 3 minutes to avoid crumbling, then remove to cooling racks. Then grab yourself a cup of milk and enjoy!!!!
