Oven Baked "Fried" Chicken

This chicken is a cross between fried and rotisserie chicken. It's so tender and juicy and falls off the chicken bone. It's super easy with very little prep work depending on how much you like to make. I like to make a lot for left overs and turn the chicken into chicken salad, chicken quesadillas or whatever else I can think of at the time. I absolutely love chicken's versatility, thus why I choose this protein for many meals. Try this recipe! You won't be disappointed and will love making it again!

What you need:
~Chicken pieces, thighs and legs, skin on (no set amount of pieces needed)
~Liquid smoke if you can get it
~Garlic powder
~Onion powder
~Salt
~Pepper

Let's get to work:
1) Preheat oven to 148C or 300F (sloooooooooooow is the idea here)
2) Place chicken pieces in skin side down in a pan and sprinkle on the liquid smoke over each piece. Skip this step if you don't have it, it just won't have a smoky flavor to it. Coat the chicken with salt and pepper, then generously and I mean generously sprinkle on the garlic and onion powder. Turn chicken over using a fork and repeat the same process on the other side. It's ok if your chicken is touching each other in the pan. Place in the oven uncovered for 3 hours. Do not open the door and turn oven off for 30 minutes. Chicken is then ready to serve. If you want, you can always place on a hot grill to really crisp the skin for about 2 minutes each side. That's an optional step, but a yummy one if you choose to do it! Enjoy! Goes great with a cabbage salad!

**You can always flavor your chicken however you like. I like to use chipotle sauce on the underside sometimes along with other spices to make a fierce fiery tasting chicken. Be creative and spice as you like! =)
