Tuxedo Strawberries

My Mom in Florida showed me how to make these little gems. (thanks Mom!  Love you!)  They are fantastic to give as gifts, or to top cheesecake or any other cake or cupcakes, or just eat alone with a nice glass of champagne, yep, now we're talking! =)  They are quite simple to make even though they may look complex. 


What you need:
~Extra large strawberries washed and dried completely with green tops on.
~White chocolate 2 Lindt bars or a bag of white chips.
~Semi-sweet chocolate.  I like to use 70% Cocoa as for me the darker the better, but you can simply use whatever chocolate you like.  So 3 Lindt bars for the chocolate as you will need some room to dunk.
~Small paint brush dedicated only to food of course.
~Wax paper


Let's get to work: 

  1. Melt the white chocolate in a double boiler (you will obviously need 2 pots for each chocolate).  If you don't have a double boiler don't fret, just chop up your chocolates and put in a glass bowl that fits on top of a regular sauce pot and voila, a double boiler.  I don't like to microwave the chocolate to melt it because you always risk it burning.  But if you have a knack for melting your chocolate like that, then go for it!
  2. Take a completely dried strawberry and dunk 3/4 of the way up with white chocolate and set on wax paper until set.  Repeat with all the strawberries and let the chocolate set.  Usually it will take an hour, but it depends on the humidity in the air, etc.  I wouldn't recommend putting in the fridge as it will cause the chocolate to "sweat" when it comes out and form those white crystalline things on the chocolate called bloom that looks so unattractive,yet not harmful if you eat it. 
  3. Once the white chocolate is set, melt the dark chocoalte and then taking each strawberry dunking it on each side to form a "V".  Place on wax paper to set.  Once they are all done, take your paint brush and dip in the chocolate to form the buttons and bow tie of the shirt.
These are not a make ahead treat as the fresher they are the better they are since as strawberries age, they shrink and start to sweat with the chocolate on them and then leak water from the berries.  You can make them the day before you need to use them, but I prefer the day of.  They will keep for about 3 days fresh, then after that, they start to really peak.
